Why food needs to be powdered and passed through a Preduster?

Predusting machine is can cover the meat with a layer of flour or sometimes very fine crumbs.  Before applying batter and breadcrumbs, The flour is usually used as the first layer. Dust adheres to the surface by absorbing free water on the surface. It will be used later to form an intermediate layer between the product and the next batter layer. It is important that the surface of the product must be prepared before dust removal. An icy surface or a surface with ice cubes can interfere with good adhesion. Therefore, attention should be paid to the temperature of the meat and the amount of free water on the surface. The adhesion before dusting can be enhanced by adding proteins such as egg white.

Generally, The dusting layer is the first coating on the product, it is usually used to carry seasonings and spices.

After the food is fried, the seasoning will “solidify” on the food.
